Tasting Notes
The 2016 Consensus is generous and dense in colour. Intense aromas of cassis, black cherry and blackberry leap out of the glass and immediately begin telling the story of the tremendous 2016 growing season. The primary dark fruits are very prominent and accentuated with notes of vanilla, cream and tobacco. The story of this wine continues on the palate, where these flavours explode into a crescendo of black-fruited splendor, storming out to all corners of your mouth, but held in check with plenty of fine-grained, opulent tannins. The overall impression is of a serious wine that commands your attention and respect, one that is built to age for 5-8 years (or longer depending on your preferences).
Vineyard Notes
The 2016 growing season was long, dry and warm, with most vineyards maturing their fruit very early and with perfect ripeness. The grapes for the 2016 Consensus came from the legendary Blind Creek Vineyard in the Similkameen Valley. During harvest the grapes were sampled bi-weekly to measure flavour development and phenolic ripeness. Each variety and parcel of fruit was picked at its optimal point of flavour development for the intended big, rich, style of wine that we were targeting.
Production Notes
THE BLEND: 44% Cabernet Sauvignon, 41% Merlot, 15% Petit Verdot
Winemaker Notes
The grapes were picked at optimum maturity on October 22nd, 2016, and destemmed gently into small fermentors. Hand plunging took place 1-4 times a day during the maceration period of the fermentation, which lasted about 10-12 days. Fermentation temperatures were fairly warm and ranged from 28 to 34 degrees Celcius, in order to extract good colour and tannin into the wine. The wine was pressed near and transferred to French oak – 25% of which was new – for 21 months. The wine was removed from barrels and gently clarified before bottling in August 2018.
